Broccoli Cream Soup
This creamy soup tastes like it has cream, but the yogurt does all the work. The green peas give it a lovely green color! You can also use a few leaves of kale: remove the stem and let it wilt slightly in the hot liquid with the peas before blending.
2 C Broccoli
1-2 C Chicken broth (or bone broth)
1 C Green peas (I use frozen)
(Optional) A few kale leaves
1/2 C Plain Greek yogurt
Salt to taste
Add broccoli and broth to pressure cooker, and cook at high pressure for 4 minutes.
Add green peas and stir until thawed and warm.
Blend with yogurt in high powered blender. Salt to taste.
Easy and AMAZING!
